Collagen supplementation along with vitamin C may contribute to the health of the gastro-intestinal tract by reducing free radical damage, supporting collagen formation and subsequently the structure and function of connective tissue. Chen et al(8) reports the ability of collagen to ameliorate epithelial barrier dysfunction. The mechanism of action identified in this study was enhancing tight junctions. Biscuit Ingredients

  • 250g Gluten free flour
  • 100g caster sugar or Coconut sugar
  • 100g butter
  • 1 egg
  • 1 tsp baking powder

Makes -- 20 biscuits

Preparation time – 40min

Collagen Cream Ingredients

  • 120g white caster sugar
  • 250g unsalted butter, softened, cut into pieces
  • 60g almond milk
  • 1 tsp vanilla extract (optional)
  • 2-3 heaped tbsp Ariya Purity Collagen (depending on flavour preference)

Preparation time – 10min

Preparation

  1. Preheat oven to 180 deg
  2. Line your baking tray with baking paper & set aside.
  3. Place flour, sugar, egg and baking powder into mixer and mix for about 20sec or until you have a nice cookie dough.
  4. Grab about a teaspoon amount of dough and roll into a ball, place onto the baking tray.
  5. Repeat until the remaining dough is used.
  6. You will then need a fork to flatten the balls into a round biscuit.
  7. Place into the oven for approx. 20min or until golden.
  8. Allow to cool.
  9. While the cookies are in the oven you can start prepping your Collagen cream.
  10. Place caster sugar, butter, vanilla essence and Collagen to taste into mixing bowl and whisk until light and fluffy (about 3mins) 11. Once all whisked and the cookies are cool spread the butter mixture over the flat side of half the biscuits and sandwich together with remaining biscuits. 12. Refrigerate after completing……if they don’t get eaten straight away.

Please note there will be some tasty Collagen cream left over – this can be frozen to be used at a later time.
